text-align: center;"&gt;&lt;a href="http://4.bp.blogspot.com/-VU5Z-TR6WE0/Tt5vFcYqbTI/AAAAAAAAAWM/imB9ilzuYKg/s1600/gagarin.jpg" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"&gt;&lt;img border="0" height="240" src="http://4.bp.blogspot.com/-VU5Z-TR6WE0/Tt5vFcYqbTI/AAAAAAAAAWM/imB9ilzuYKg/s320/gagarin.jpg" width="320" /&gt;&lt;/a&gt;&lt;/div&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;span lang="EN"&gt;&lt;div align="JUSTIFY"&gt;Ciclicamente ogni anno, proprio in queste settimane, i quotidiani locali donano un briciolo&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;di celebrità a un uomo che con fierezza viene ritratto stringendo tra le sue mani il premio&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;della Dea Bendata: il tartufo più grande della stagione.&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;Quell’uomo è generalmente un commerciante, la figura che media, acquista il prodotto&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;da coloro che vanno per boschi, colui che deve dare un valore economico al pregiato&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;tubero.&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;Elio Rossi,faentino, è accreditato come uno dei commercianti più stimati e affidabili in Romagna: merito della serietà con cui seleziona il tartufo che riceve dalla sua rete di cercatori e soprattutto &lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;della rigidità con la quale ha sempre voluto trattare solo prodotti locali. &lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;&lt;/div&gt;&lt;br /&gt;Elio è la punta dell’iceberg di un mondo sommerso fatto di curiosi personaggi: i tartufai.&lt;br /&gt;&lt;br /&gt;Gente che si muove furtiva nel buio della notte tra le mura di casa come tra i sentieri del bosco quasi fosse un agente segreto in missione; &lt;br /&gt;&lt;br /&gt;uomini che nascondono le orme nei passaggi più reconditi o ancora che camminano all’indietro sulla neve per confondere il loro percorso.&lt;br /&gt;&lt;br /&gt;Gente che mai mostra il proprio cesto pieno al bar degli amici, che non può innalzare con orgoglio un ritrovamento particolarmente fortunato, perché ciò causerebbe le invidie degli altri cercatori e soprattutto perderebbe il suo basso profilo.&lt;br /&gt;&lt;br /&gt;Ogni mossa è tesa a mantenere nascosta agli occhi degli altri tartufai, visti come dei pirati immaginari, la propria mappa del tesoro, singoli alberi sotto cui scavare con la fida vanghetta, che con gli anni sono stati apprezzati per la costanza con la quale regalano tra le loro radici questi rari frutti del sottobosco.&lt;br /&gt;&lt;br /&gt;Tartufo bianco, scorzone, moscato, bianchetto, nero dolce, ogni varietà ha i suoi estimatori e ognuna necessita per vivere di una serie di variabili assai ardue da far coincidere.&lt;br /&gt;&lt;br /&gt;L’altitudine, i terreni, il clima e la vegetazione sono gli elementi fondamentali per la vita del tartufo; il clima è la condizione più imprevedibile ovviamente, ma anche i terreni stanno perdendo la loro forza vitale a causa del graduale abbandono dei boschi da parte dell’uomo, che con le sue lavorazioni manteneva pulito il sottosuolo e quindi più ricettivo.&lt;br /&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;Come dice Elio, sebbene nulla in questa faticosa ricerca possa essere lasciato al caso, nulla c’è di scientifico e calcolato. Ecco quindi che entra in ballo il fattore più determinante per la raccolta del tartufo, il meno prevedibile ma anche il più affascinante: il rapporto uomo-cane da tartufo.&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;Una congiunzione primordiale legata da una profonda conoscenza l’uno dell’altro, rafforzata con un paziente addestramento e un amorevole e giocoso allevamento sin da cuccioli: il cane diventa così il sesto senso del tartufaio.&lt;/div&gt;&lt;br /&gt;&lt;div align="JUSTIFY"&gt;Una volta trovato e raccolto, inizia il lavoro di Elio e di tutta la famiglia Rossi, con la verifica del prodotto e la sua valutazione che si basa, oltre che sulla qualità e sul peso del singolo tartufo, anche sulla quantità di prodotto presente sul mercato nazionale.
